Omni Roasting: One Roast To Rule Them All

What Is Omni Roasted Coffee?

To understand the process of Omni roasting, we first need to dive into the vast world of roasting coffee. The traditional approach for roasting filter coffees (i.e. v60, Aeropress, Clever Dripper, Chemex, Syphon, Cold Brew, Cold Drip and more) is more often than not roasted lightly. Not only this, but it is paired with a shorter development time (up to around 1min- 1min15sec). Whereas coffee that is traditionally roasted for espresso is treated differently and usually pushed to high temperatures for a relatively longer development time (between 1min45sec- 2min).

At this point, I’d like to stress the nuanced nature of coffee roasting; the slightest change to heat, drum speed, and roast times will make a massive difference in how the bean will taste. Either way, there is a clear difference between espresso and filter roast, and a lot can stuff up! Especially if you don’t treat each coffee varietal (plant species), the type of processing and the bean’s origin differently and with care!

Here is where we introduce Omni roasting. Omni roast is different because the intent is different. Omni roast emphasises roasting for the coffee itself rather than roasting coffee for the brewing method (filter, espresso). Omni roasting seeks a balance between espresso and filter roasts while understanding the uniqueness of the bean to simultaneously uncover a plethora of flavours linked to the bean. Therefore, Omni roasting helps reduce the compromises (such as over or underdeveloping the bean) when roasting for brewing methods and seeks to develop a uniquely specific roast profile to maximise the flavour depth across various brewing methods.

Omni Roasting Demands More

I know what you must be thinking, “Omni roasting sounds lazy”, but it is, in fact, quite the opposite. A lot of research and development goes into an Omni roast profile. When crafting an Omni roast profile that accentuates the farmer’s work, each coffee needs to be treated differently. So each coffee and its variations will possess its own Omni roasted profile. This requires a lot of knowledge about the bean and a lot of cupping and sample work, of course!

Omni roasting demands more effort in terms of sampling different techniques to aid in the emphasis of the flavour and the highlight of the bean attributes. There is no traditional “stock” recipe for an Omni roast, as it requires an in-depth understanding of the bean and its intricacies to help create a recipe for your preferred brewing method. This gives you – the barista or home brewer – the opportunity of putting in time and effort to come up with fresh and exciting new recipes.
